Toasted Open Egg Sandwiches (df, veg)
Eggs are a great protein and healthy fat source for women who experience insulin resistance and hormonal imbalances due to high sugar and carbohydrate consumption. Eggs are filling and provide a stable release of energy and don’t spike your blood sugar compared to refined carbohydrates. These are my version of simple Egg Sandwiches I made for breakfast today that took less than 5 minutes because I have boiled eggs on hand in my fridge.
Tip: Boil your eggs in advance and put them in the fridge so you have them available when making breakfast or a snack. They last for a week.
Serves 1, Cooking time: less than 5 mins
Vegetarian
Ingredients
1 boiled egg
½ Tbsp kupi mayonnaise
Salt and Pepper
Toast
1/3 Avocado
½ Tomato
Method:
Toast 1 slice of bread
In a small bowl, mash the boiled egg with a fork.
Add in the mayonnaise, salt and pepper and continue to mash till consistency you like ( I like mine with small chunks in it).
Spread avocado on toast
Layer the egg mixture on top.
Slice the tomatoes and place on top.
